These salmon quinoa patties are easy to make in large quantities and they are a tasty, healthy way to add protein to any dish.

Ingredients
16 oz (1 lb, 2.2 kg) skinless salmon fillet
1/3 cup (43 g) shallots, diced
1 cup (67 g) kale, chopped
3/4 cup (135 g) quinoa, cooked
2 tbsp (28 g) Dijon mustard
1/2 tsp (2 g) cajun seasoning
1 large egg, beaten
1 tsp (4 g) vegetable oil
1 tsp (4 g) kosher salt
1 tsp (4 g) black pepper
1 bottle of Vatsana's Seafood Hot Sauce
Let's begin the adventure:
Cook the quinoa in advance (takes about 15-20 minutes) and cut the shallots and kale.
Cut off a 4-oz piece of salmon and chop in a food processor. This will help hold the patties together. Transfer to a large bowl.
Dice the remaining salmon, then transfer to the large bowl.
Heat a large nonstick skillet over medium heat, add oil and sauté the shallots and kale. Cook until wilted and tender, about 5 minutes.
Transfer to the large bowl with salmon, and then add the cooked quinoa, Dijon mustard, cajun seasoning, beaten egg, salt, and pepper. Mix, then form into 5 patties, about 1/2 cup each. Don't worry if the patties don't stick together well; they'll look better as they cook.
Heat a nonstick skillet over medium heat with oil, then add as many salmon patties as will fit without them touching each other. Cook each side for about 4 minutes.
Serve over salad or quinoa, and add Vatsana's Seafood Hot Sauce to taste.
