Fried Panko Shrimp Recipe

Ingredients:

  • 1 lb extra-large shrimp, shelled and deveined, leave tails on.

  • 2 cups panko bread crumbs

  • 2 eggs, mixed

  • 1 cup flour

  • 2 tbsp dried parsley

  • kosher salt and black pepper to taste

  • canola oil for frying

  • fresh parsley for garnish (optional)

Needed:

  • 1 medium bowl

  • 2 small bowls

  • 1 medium saucepan


Let's begin the adventure!

  1. With a sharp knife, butterfly the shrimp, cutting almost all the way through in half lengthwise.

  2. In a medium bowl mix the panko bread, parsley, salt, and pepper.

  3. In one small bowl, add 1 cup of flour; in another second small bowl, mix 2 eggs.

  4. Heat about 3 inches of oil in a deep saucepan or deep fryer to 360 degrees. You'll know the oil is ready when you toss in a crumb of panko bread and it floats and bubbles.

  5. Coat the shrimp with flour, then with eggs, and finally with the panko bread mix. It's going to be so crunchy.

  6. Fry the shrimp in batches. Do not overcrowd the pan. Cook for about 4 minutes or until golden. If shrimp browns too quickly, reduce the heat.

  7. Garnish with fresh parsley and serve with Vatsana's Seafood Hot Sauce.
